Even though I'm not a legal expert and my area of practice is very limited, I took the initiative to search for cases involving The Church of Jesus Christ of Latter-day Saints. Incidentally, there are so many legal arms of the church that sometimes the church could be involved in lawsuits that don't bear the church title, but I just looked at two major "corporations" of the church: The Corporation of the Presiding Bishop of the Church of Jesus Christ of Latter-day Saints, and The Corporation of the President of the Church of Jesus Christ of Latter-day Saints.
Although it appears that the church has been sued more than it sues, the church does initiate its fair share of lawsuits. Here's a summary of an interesting one which validates my line of work. The church apparently lost this particular case:

CORPORATION OF THE PRESIDENT OF THE CHURCH OF JESUS CHRIST OF LATTER-DAY SAINTS, Plaintiff
and
Corporation of the Presiding Bishop of the Church of Jesus Christ of Latter-Day Saints, Plaintiff-Appellant
v.
FARM BUREAU MUTUAL INSURANCE COMPANY OF IDAHO, Defendant-Appellee. [2001]
Following accident caused by negligence of missionary driving vehicle provided by church, missionary and parents assigned rights under automobile liability policy and umbrella excess liability policy to church, which sued insurer. The United States District Court for the District of Idaho, Lynn Winmill, J., entered summary judgment for insurer, and appeal was taken. The Court of Appeals held that: (1) exclusion for non-owned vehicles made available for regular use by insureds precluded recovery, and (2) umbrella policy was not triggered by claims against policy issued to church. Affirmed.
I do not believe that the church generally discourages suing (although I agree that "frivolous lawsuits" are wrong simply because the term frivolous implies dishonesty and greed). Lawsuits are merely a legal mechanism to have a third party (judge or jury) solve a dispute. When insurance is involved, I believe lawsuits are necessary to collect money already promised by insurance companies but which insurance companies have declined to pay for one reason or another.
